This is the recipe for the carrot cake I occasionally make. Swiped from Gwendolyn in Pittsburgh.
Gwendolyns Carrot Cake
Cake:
2 C sugar
4 eggs
1.5 C veggie oil
2 C flour
2 t cinnamon
2 t baking soda
1 t salt
1.5 t vanilla extract
3 C (heaping) grated carrots
1 t nutmeg
1) Mix sugar, eggs, oil, vanilla
2) Add flour, cinnamon, nutmeg, soda, salt
3) Hand stir in carrots
4) 2 9-in baking pans @ 325F for ~40 minutes / 1 9x13-in @ 325 for ~60 minutes
Icing:
1 16oz box confectioners sugar
1 stick butter
1 8oz block cream cheese
1 T vanilla extract
1) Mix. Spread. EAT.
